Healthy eating is hard in general but especially during the busy morning hours.  My daughter likes to eat a pancake (without the syrup) as her toast for breakfast in the morning.  I don’t have time to whip up a batch of pancakes every morning so of course I go with the frozen pancakes.

If you have ever looked at the label you will notice they do not fit into a healthy eating plan, even the whole grain pancakes are a pretty poor choice.

Solution - I use the whole grain recipe found below and on the weekend when I do occasionally make pancakes I just double the batch and put my own pancakes in the freezer. 

Healthy eating takes some planning and it takes a little bit of thinking about how you can make something  better.  When we eat pancakes on the weekend (not every weekend) we don’t always go whole grain, but a lot of times we do.  Baby steps - little changes to your diet here and there will add up over time.

Whole Grain Pancakes (3 servings)

  • 3/4 cup multi-grain pancake mix (Arrowhead Mills)
  • 1 tablespoon canola oil
  • 1/2 cup plus 2 tablespoons of milk or soy milk
  • 1/2 fresh blueberries optional
